Grape Variety

Mourvèdre (80%) and Syrah (20%), 30 year-old vines

Terroir / Soils

Corbières (terroir Boutenac). Clay limestone soils within a natural amphitheatre surrounded by pine trees and garrigue. The grapes are selected from a specific parcel at the foot of a pine copse, where the combination of slope, aspect and aeolian sand (atypical for the Corbières) enable the Mourvèdre to achieve full ripeness.

Sustainable viticulture (‘culture raisonnée’). Organic fertilizers only; no systemic treatments – all interventions according to need, based on observation and analysis. Severe winter pruning to restrict yields (38-50 hl/ha, depending on the variety); gobelet with wire trellising for wind protection for Mourvèdre, guyot for Syrah. Carefully harvested at optimal ripeness.

De-stemming and fermentation with indigenous yeasts. Temperatures strictly controlled to bring out fruit character. Maceration 20-25 days followed by gentle pressing. Malolactic fermentation in barrel. 14.5° vol.

Matured 14-16 months in 600 and 300 litre French oak barriques (100% new) ; light filtration (no fining) and bottling at the Château.

Tasting note

A powerful, full-bodied and concentrated wine with ripe black fruit, rich dark spice and chewy tannins. Complex and long. Serve 18°C. Accompanies meat dishes, especially game. Ageing potential up to 10 years.
