Grape Variety

Carignan (50%, old vines), Syrah (25%), Mourvèdre (15%), Grenache (10%)

Terroir / Soils

Corbières (terroir Boutenac). Clay limestone soils within a natural amphitheatre surrounded by pine trees and garrigue. The specific climat offers soil containing aeolian sand, atypical for the Corbières, giving the wines more suppleness and soft fruit character.

Sustainable viticulture (‘culture raisonnée’). Organic fertilizers only; no systemic treatments – all interventions according to need, based on observation and analysis. Severe winter pruning to restrict yields (38-50 hl/ha, depending on the variety); gobelet for Carignan, Grenache and Mourvèdre, guyot for Syrah. Carefully harvested at optimal ripeness.

De-stemming and fermentation with indigenous yeasts. Temperatures strictly controlled for maximum fruit character and to avoid extraction of any bitter tannins. Maceration 20-25 days followed by gentle pressing. 13.5° vol.

Matured in French oak for four months (Syrah), and in vat (Carignan, Grenache, Mourvèdre); blending and light filtration; bottled at the Château.

Serving note

A medium to full bodied wine with a ripe dark berry fruit character. The soft fruity aromas are complemented by notes of peppery spice, vanilla and rosemary. Silky elegant tannins complement good balancing acidity for a refreshing, long finish. Serve 18°C. Accompanies meat dishes, cheeses.
