Le P'tit Spencer (The Little Spencer)

Grape Variety

Carignan (50%), Mourvèdre (20%), Syrah (15%), Grenache (15%)


Terroir / Soils

Corbières (terroir Boutenac). Clay limestone soils within a natural amphitheatre surrounded by pine trees and garrigue. The specific climat offers soil containing aeolian sand, atypical for the Corbières, giving the wines more suppleness and soft fruit character.


Viticulture

Sustainable viticulture (‘culture raisonnée’). Organic fertilizers only; no systemic treatments – all interventions according to need, based on observation and analysis. Severe winter pruning to restrict yields (38-50 hl/ha, depending on the variety); gobelet for Carignan, Grenache and Mourvèdre, guyot for Syrah. Carefully harvested at optimal ripeness.


Vinification

De-stemming and fermentation with indigenous yeasts. Temperatures strictly controlled for maximum fruit character and to avoid extraction of any bitter tannins. Maceration 20-25 days followed by gentle pressing. 13.5° vol.


Maturation

Matured in vat. Blending after five rackings (to avoid an overly robust filtration). Bottled at the Château.


Tasting note

Deeply coloured, with sweet plum fruit and delightful mineral overlay on the nose. A light-medium bodied wine, with supply juicy fruit, notes of spice and garrigue. Smooth, light tannins and juicy finish. Serve 18°C. Accompanies tapas, Mediterranean cuisine, white meats.
